I created this meal plan, and I’m going to stick to it. I am going to do it. Really, I am. I’m even going to bring my lunch to work. I think most, normal wives/mothers/humans do this on a weekly basis, but not me. I enjoy cooking but am not a good meal planner. Here are my goals: quick, simple, delicious and healthy-ish.
LUNCHES
Soybean Salad
The soybean salad in the The Lee Bros. Simple Fresh Southern Cookbook is amazing – and keeps in the fridge for a few days. It’s a combination of soybeans, buttermilk and basil. This cookbook, BTW, is awesome. It’s actually my favorite. I’ve loved every recipe I’ve tried from it, and I got to meet the Lee Brothers last year during Coastal Uncorked.
Salads
I’m also going to make some salads – but I’m not sure if I need go out and buy mason jars for them. I’m going to layer some of my balsamic vinaigrette, soybean salad, quinoa, pears, walnuts, cheese, and mixed greens.

The post claims this is the “best broccoli of your life” so I’m going to have to try it! I will serve with grilled chicken & rice.
Monday:
Roasted Parsnips from the Lee Brothers cookbook served with leftover grilled chicken and kale chips.

Chicken Tacos (I make a version of this Pampered Chef recipe that is delicious. I omit the jicama and avocado.) and quinoa with black beans and cilantro. Mayyyybe chips and guacamole too!!!
Wednesday:
Quesadillas made with my favorite kitchen gadget – the Griddler Jr. – and the black beans & quinoa.
Thursday:

I love the concept of Freezer Meals – like Dream Dinners. I’m going to try the Asian Salmon, it looks amazing!! I’ll make an extra batch to freeze.
Friday:
We are going to out to dinner… or having a frozen pizza!
