I’m always curious what people eat for snacks and lunches, so I quizzed my friend in Richmond while staying with her and she enlightened me on this snack / lunch and this is my new favorite for a few reasons: It’s tasty, I love avocados, and it’s really simple.

Ummmm… It makes my face sort of nervous.
I’d never heard of Ezekiel bread but my husband informed me that it’s well-known in health food circles. If you, like me, have never heard of this, let me tell you about it. Find it in the freezer section at the grocery store. I think it was actually in the “healthy” or “organic” section at the store when I found it. It’s stored in the freezer, and it’s crunchy and a little nutty when you toast it. Spread avocado on top and your lunch prep is complete! You could add tomatoes to it, but I like it plain.
I’ve been trying to go to the gym at lunchtime and eat lunch at my desk – and this quick prep and filling lunch has been the main course. I eat two slices and have some sides, and I’m good for the afternoon. I’ve done this a total of four times, so far. We’ll see how long this trend lasts. Also, let me be real: when I don’t eat at my desk and go to the gym, I go out to eat and rarely make smart choices. It sort of balances out to be ultra healthy one day and indulgent the next, right?
One more snack I’ve loved this summer: The cherries at Lowe’s have been amazing.
