We had brunch at one of our favorite spots, Lulu’s Cafe in Myrtle Beach, which is a diner that features a menu with a gourmet twist on traditional comfort foods like the grilled cheese.

This brie and apple grilled cheese is a delicious creamy and sweet combination – and I think it would be pretty simple to make at home for a Saturday morning brunch if you don’t live near Lulu’s Cafe in Myrtle Beach. I think the key is to get a really good bread and of course, lots of brie. For a perfectly thin-sliced apple or pear, try a mandolin. I purchased one a few months ago for some obscure apple and cinnamon water recipe that was supposed to boost my metabolism and make me lose weight (it did not) but I do love the kitchen gadget.
