I grew basil in my garden which I turned into a fun bonding experience with my son and then used the basil to make a healthy, homemade salad for dinner. How very perfect mom blogger of me, right?
Full disclosure: let’s back up a few weeks. Our very small fenced-in courtyard was overgrown. Weeds on the ground and weeds in the window box. We have about 6 square feet of outdoor space to landscape. We hired someone to do it. Yep, no shame in my game. Neither one of us enjoy nor know how to garden, and while we got an amused “that’s what you want us to take care of?” comment from our landscaper friend, we decided if we didn’t want it to look unkempt (which it was) we should probably just pay for someone to take care it. So I have nothing to do with the little “herb garden” that got lots of admiring comments from gardening friends, other than manage not to kill it.
Anyway, even though my only contribution to basil growing is successfully not killing it off in two weeks, we did enjoy cutting it to use in the salad. I’ve said it at least thirty million times – I LOVE Plated. It’s really taught me how to cook and use fresh herbs and given me confidence in the kitchen. This week, we had salmon with a salad — but they sent SO MUCH salad, I only used half of the lettuce. I decided to get bold and make my own vinaigrette the next night.
Perfect Summer Salad Dressing Recipe
- Lettuce: arugula, frisee, radicchio, butter lettuce
- 1 cup olive oil, 1/4 cup apple cider vinegar, 1/4 cup basil, 2 tablespoons honey
Those measurements are actually very approximate. It was more like this: drizzle olive oil in bowl for about 10 seconds, pour honey from the jar and quickly put it back up, pour apple cider vinegar into bowl for about 2 seconds, and throw in a handful of chopped basil. If it tastes great, go with it. If it needs to be a little sweeter, add more honey. If you want it tangier, add more apple cider vinegar.
